How do you select to print without using the purge block?
I would like to just have the colors blend in a sublte type instead of the exact layer?

I am not sure this will answer fully your question: in Canvas, select one of the Inputs in the Toolbox; then, a second toolbox appears, with colors, materials and three buttons :
“+” to add materials
“Splice settings”
The button inbetween shows some kind of gradient. Click it: it will allow you to tune the transition length between colors. You can reduce it, and thus reduce the purge tower, and print with mixed colors.

That will have to do but why can't we simply select "Purge off"

Looks like this gets close, but in Canvas it won't let me set the transition length to 0, only to 30 at minimum. This gets close, as it's 100mm shorter than default, but not all the way to 0 purge.
I have a suspicion that this may be to ensure that the palette can register pings from the printer for filament feed calibration?
Given that there are Gcode commands that can tell the printer to send a message back to the host (such as Marlin's M118) it may be worth looking into that for a quicker ping communication that doesn't require the print-pause-print-pause longer-print routine.
I know you say canvas but when i need to do this i use p2pp. You can do exactly as you need and turn off the purge block and just run the colours straight through.
